Les <strong>oliviers<\/strong> de cette r\u00e9gion de <strong>Sicile<\/strong> sont souvent centenaires, hauts et caract\u00e9ris\u00e9s par un large feuillage. La <strong>vall\u00e9e de l&#8217;Alcantara<\/strong> est \u00e9galement riche en agrumes, qui partagent avec les oliviers un territoire unique, sur les pentes du volcan <strong>Etna<\/strong>.<\/p>\n<h4>La r\u00e9colte<\/h4>\n<p>Nous r\u00e9coltons nos olives \u00e0 la main, entre octobre et novembre. Notre objectif est de pr\u00e9server toutes les propri\u00e9t\u00e9s du fruit et d&#8217;\u00e9viter les attaques parasitaires qui pourraient affecter n\u00e9gativement la qualit\u00e9 de l&#8217;huile. Les vari\u00e9t\u00e9s \u00e0 partir desquelles notre huile est produite sont la <strong>Nocellara dell&#8217;Etna<\/strong>, la <strong>Nocellara Messinese<\/strong> et le <strong>Brandofino<\/strong>, un rare <strong>cultivar<\/strong> autochtone sicilien, r\u00e9pandu sur les pentes de l&#8217;Etna dans la vall\u00e9e de l&#8217;Alcantara.<\/p>\n<p>D\u00e8s leur r\u00e9colte, les olives BeO sont stock\u00e9es dans des caisses en plastique \u00e0 fen\u00eatre, bien ventil\u00e9es afin de ne pas alt\u00e9rer la qualit\u00e9 d&#8217;origine.<\/p>\n<h4>Le broyage<\/h4>\n<p>Notre objectif est de pr\u00e9server au maximum le <strong>contenu polyph\u00e9nolique<\/strong> et les caract\u00e9ristiques organoleptiques de cette huile <strong>pr\u00e9cieuse<\/strong>. Le broyage est donc effectu\u00e9 selon des m\u00e9thodes modernes, en cycle continu et en l&#8217;absence d&#8217;oxyg\u00e8ne. L&#8217;extraction se fait <strong>\u00e0 froid<\/strong> avec des temps de malaxage r\u00e9duits. Pour le stockage, nous utilisons des silos en acier inoxydable, en l&#8217;absence d&#8217;oxyg\u00e8ne, \u00e0 une temp\u00e9rature contr\u00f4l\u00e9e et constante.<\/p>\n<h4>Le profil sensoriel<\/h4>\n<p>Le r\u00e9sultat est une <strong>huile d&#8217;olive vierge extra riche<\/strong> et raffin\u00e9e, de couleur dor\u00e9e avec des reflets verts, assez dense. L&#8217;<strong>acidit\u00e9<\/strong> est <strong>tr\u00e8s faible<\/strong> (0,2), le nez r\u00e9v\u00e8le un fruit\u00e9 vert moyen avec des notes v\u00e9g\u00e9tales.
